We started with wine pumping over!
The harvest does not end after collecting the grapes but continues with an equally important and fundamental job: the period that the grapes will spend in the cellar.
Pumping over is a practice used in the vinification of red wines and consists in transferring the must from the lower part of the fermentation tank to the upper part, using an oenological pump.
During fermentation in the tank, a compact layer of marc is created, called cap, and it does not allow the oxygenation of the mass.
Hence the importance of pumping over which helps the wine to breath.
