One of the important choices for a producer is the CORK.
Being in the business for 25 years provided us some experience in this field. As we know, wine is alive and keeps evolving in the bottle, so we need to choose the cork according to the wines’ necessities and purpose. We can say that in this field technology advancements helped a lot, avoiding that a poor cork might ruin the liquid. We can hence say that the quality of a wine may also depend on the cork.
We use 3 types of corks: For Catarratto, Syrah, Nero d’Avola, Don Pietro Bianco and Don Pietro Rosato we use the Select Green Bio 300 by Nomacorc. It’s the first cork in the world without carbon imprint with zero impact on the environment, thanks to the PlantCorc patent. The choice is of course for the wine. Those are in fact wines that, except for the two reds, we introduce in the market after eight to ten months from the harvest, hence they need to be fresh with not so much oxygen exchange. Our wines are all organic so we chose a cork that fits in with our philosophy, made out of sugar beet fibers without glue, 100% recyclable.
For Don Pietro Rosso, Grillo and our Metodo Classico Enrica Spadafora we chose the Diam cork. For the first 2 we picked the 44×22 Diam5 cork, that keeps the aromas for at least 5 years from the bottling, while for the Enrica Spadafora we chose the Mytik Diamant mushroms cup 31×48, that keeps the bubbles fresh. They are both patented corks that use technology to keep the product at its best. These are in fact corks without the TCA, the substance that provides the typical ‘cork scent’, and they grant a good oxygen exchange.
Finally, for the CRUs, Schietto line, Siriki line and Sole dei Padri we use the unbleached Monopezzo Nature, by the classic company Amorim; we use a 49×62 the kind of closure for the great wines. Once we put the cork we then place the bottles in vertical position so that the cork can relax, thanks to its elasticity, inside the bottle. After few days the bottles will be placed in horizontal position so that the wine can wet the cork and keep on refining. This cork grants us longevity to our cru and avoid us problems even when we need to uncork an old bottle.
For goodness’ sake, a corked bottle may always occur, but that’s part of the beautiful world of the wines, after all, we will change you the bottle!
