perfect with fatty cheeses, pecorini, aged Parmesan. Ideal with slightly dry cakes, particularly if they are paired with caramel or chocolate creams.

On the label I specified that this wine was produced using overly ripe grapes which had been left on the vine. And, when you taste it, that's precisely the impression you will have.

Take a moment to picture this: the grape harvesting has ended and everyone is tending the fermentation vats or seeing to the maceration process of the red grapes. You're walking through the countryside and you taste some grapes that have been left on the vines in order to create this unique product that can only be prepared in our area.

Our specialty grapes, Catarratto and Grillo, are suited to a thousand and one renditions, and this is just one of them.
